Curing Kingfish

There are many different ways to prepare fish. This recipe takes 24 hours and it’s great for curing firm fleshy oily fish like this Geraldton Kingfish.

Ingredients

  • Light brown sugar
  • Salt
  • 15 ml gin
  • Dill
  • Grapefruit
  • Star anise
  • Coriander seed
  • Kingfish fillet
  • Chopped shallots
  • Chopped chilli
  • Cucumber, cut small
  • ½ avocado, diced
  • Lime juice

 

Recipe

  • In a container, prepare the curing mix, which is made with equal parts sugar and salt, some ground coriander seed and star anise. Add some chopped dill for flavour. Grate some grapefruit zest and add it to the mix together with the gin. Mix well.
  • Put the fish fillet in the container. Make sure you cover it with the mix as well so it’s well coated all around. Place in the fridge overnight: the salt and pepper will draw all the moisture out of the fish and help the curing process.
  • Prepare the salsa: mix the chopped shallots, chilli and cucumber. Add the avocado and mix.
  • Once the fish is cured, rub off any of the residual salt and sugar and spices. Slice thin.
  • Place the kingfish pieces on a platter, folded in order to create some height. Place the salsa on top and dress with the lime juice.
