Banana Roti with Coconut Caramel Sauce


Ingredients

2-3 bananas
4 sheet of puff pastry
Brown sugar

400ml Coconut milk
1 cup of brown sugar
Pinch of salt


Method

  1. Finely slice bananas and set aside
  2. Take your pastry sheet and roll it out until it is thin using a rolling pin
  3. Arrange your banana slices in the middle of the sheet in a square formation, sprinkle with brown sugar
  4. Fold each of the edges in towards the middle of the pastry
  5. Add oil to your pan and fry Roti on both sides until golden brown, about 2-3 minutes each side
  6. Add coconut milk, brown sugar, and a pinch of salt to a pot and allow to simmer until caramelised
  7. Plate up and finish the Roti with a generous amount of the caramel sauce
