Alex shows us her delicious Crispy Fish and Laksa Mayo recipe, using Miss Chow's sauces.
Ingredients
- fresh snapper today (or any skinless white fish that is quite fleshy and holds its form)
- Panko crumbs
- All-purpose flour
- 2-3 eggs
- Whole egg mayonnaise
- Miss Chow’s Laksa Paste
- Fresh lime juice
- Salt
- sugar
Method
- Cut the fillets into bite-sized pieces, approximately 3cm wide
- Grab 3 bowls. Pour some panko crumbs in one, all-purpose flour in another, and beat eggs in the last. This will make for our ‘Crumbing’ station
- Season the fish, tossing it in some flour, then dipping it in the egg, before rolling it in the panko crumbs. It is important to press quite firmly into the crumbs to ensure even coverage.
- In a fry pan, heat a generous glug of oil. Enough to shallow fry. Drop in the fish bites, making sure not to overcrowd the pan.
- Turn them once golden on the bottom and then remove them from the pan once golden all over.
- Leave aside on some paper towels to rest.
- Grab some whole egg mayonnaise (not the sweetened kind) and combine with 1 tbsp of laksa paste.
- Squeeze in some fresh lime juice, a pinch of salt, and a pinch of sugar, and give her a good stir.
- Serve and enjoy!
