Alex shares her trick for making veggies packed and full of flavour with her Charred Broccolini with Sambal and Lemon Labneh.
Ingredients
- Broccolini
- Greek yoghurt
- Miss chow’s Sambal
- Oil
- Shallots
- Salt
- Lemon
Method
- To make the labneh, place a sieve or colander over a big bowl and line it with a clean chux cloth.
- Throw in the Greek yoghurt and leave to strain for 30 mins. (The longer you leave it, the thicker it will be)
- Blanch the broccolini in some boiling, salted water for about 1 minute.
- Drizzle the broccolini with some oil and a generous pinch of salt and place it onto a pan at medium to high heat.
- Once they've started to char on one side, flip them over and continue to char them.
- Once they have finished charring, turn the heat down to low and throw in some of Miss Chow’s sambal and a splash of olive oil.
- Once you can smell the sambal caramelising, turn off the heat
- Smear a generous dollop of labneh across the serving plate. Top with broccolini, pouring over the sambal from the pan.
- Sprinkle over some crispy shallots, flaky salt, and squeeze over a lemon.
