The brassica family are a group of vegetables with unique nutritional benefits which are enhanced when they are sprouted.
- The brassica family includes vegetables like broccoli, cauliflower, the choys, the kales and cabbage.
- The natural plant compound that is unique in these vegetables is known as sulforaphane. Sulforaphane can reduce the risk of cardiovascular disease, lower blood pressure, slow aging and improve brain function.
- Brassicas are fantastic on their own but when you sprout them, they become nutrition powerhouses.
- Sprouting broccoli gives it ten times the amount of sulforaphane than regular broccoli.
- To sprout broccoli, use a jar or a sprouting container where the seeds are sprinkled on top and covered with water a few times a day. This process should take about a week.
- Broccoli sprouts are high in antioxidants, vitamin C and many other vitamins.
- They taste a lot like radish and are perfect in a salad but also on a poached egg.
